Recipe: Grilled Fig and Ricotta Pizza with Honey

If you saw my previous post on how to grill a pizza, I did this the same way, just tried it with different ingredients! Figs are in season during late summer, and I wanted to find a tasty way to enjoy them. This turned out super delish! Follow my same steps for grilling a pizza:

Pizza dough (Trader Joe's is the best! - let sit for a bit at room temp)
Fresh Ricotta Cheese
4-5 figs sliced vertically
1 bunch of greens of your choice (arugula, spinach, etc)
Olive oil

1. Preheat the grill by turning the burners on medium/low
2. Roll out the dough with flour into desired thickness
3. Place all topping ingredients on a plate/cookie sheet, ready to bring outside
4. Brush olive oil on one side of the dough
5. Place dough directly on the grill, oiled side down
6. Let dough grill for about 5-10 minutes, watch closely- top will bubble and underside will get crispy
7. When ready, brush a little more olive oil on the top and then carefully flip over with tongs
8. Top with the ricotta cheese, figs
9. Let finish grilling for another 5-10 minutes
10. Remove carefully with tongs
11. Drizzle honey on top, sprinkle sea salt and top with greens
12. Slice and enjoy!
